My DAILY Bowl

 
 
 

Every day varies in its responsibilities, its to-do list, and its energy level. I like to take every day as it comes, but there's one staple meal I try to have at least once a day, and it’s my all time favorite salmon and veggie rice bowl. It’s important that no matter what your day's trajectory is to get in those essential vitamins and nutrients your body thrives on. It’s fuel for you to take on life's days! And making this delicious bowl does just that. Satiating, flavorful, it's something both your body and your soul will love. Taste doesn't have to be lost while cooking healthy, it can be quite the opposite actually! The more you accustom your palette to healthier ways of eating, your flavor profile grows, and your desire for those overly processed foods diminishes. Real recognizes real, after all.

This bowl is so simple, anyone can make it. Measurements don't have to be exact, take and throw out whatever doesn’t fit your vibe! The veggies can be whichever veggies you enjoy the most that you feel tastes good baked alongside salmon (or your protein of choice). My go to veggies of choice are:

  • Broccoli

  • Bell Peppers

  • Chopped Onions

  • Sliced Portabella Mushrooms

  • Carrots

  • Zucchini


Now, how does one create this amazing, nutritious dish? Let me dish you the deets:

  • Prebake oven to 350 degrees, and place protein on a baking tray with olive oil coating

  • Cut up your veggies however you like

  • Place said veggies alongside your protein on the baking tray, drizzle some more olive oil

  • In a bowl, mix 2 tablespoons of olive oil, 2 limes squeezed, and a hint of garlic and oregano (unless you're a garlic lover like myself, in which case keep doing you boo)

  • Pour over veggies and protein

  • Bake for 15 minutes

  • Make your rice of choice (jasmine rice with always be my #1 love)

  • Place veggie and protein on top of rice

  • Add sauce per choice, I love to add a little vegan greek goddess dressing

Make this plate your own! Swap out veggies and proteins, maybe change up the sauces, do whatever feels yummy and satiating for you! That’s one of the beauties of this dish, it’s adjustable to your specific taste buds, and will always ensure you get your daily dose of deliciousness!
